Fat acids found in nature is divided to to become two factions, that is saturated fatty acid and fatty acid is not saturate. Fat acids is not saturate differs in in number and position of its(the double bond. Fatty acid is not saturated usually there is in the form of cis, in consequence molecule will curve at double bond, despite of also fatty acid is not saturated in the form of trans. Existence of double bond at fatty acid is not saturated generates possibility that the happening of isomer happened on course double bond, good at molecule having formation of conjugation and also nonkonjugasi, can happened isomer cis or trans on course double bond. Fatty acid with atom C more than twelve insoluble in cool water and also temperature water. Salts from fatty acid weights unsatiated and low molecule easier to dissolve in alcohol than salts from fatty acid weights high molecule and saturate.

Oleic acid is fatty acid is not saturate which many there is in triglycerides and has one double bonds. If(when fatty acid contains two or more double bond like at linoleic acid and acid linolenat, the fatty acid called as fatty acid is not high saturate ( polyunsaturated).
